Spicy Meat and Ham

SPAM. Not the sort of spam that you get in your inbox, but the kind that one finds in America. Okay, okay, the other kind is prevalent in America too! The first time I had SPAM that I liked was when it was fried and served with rice. SPAM is more popular in Hawaii as a result of the its introduction to Hawaii during WWII.

SPAM as a canned meat product was invented by Hormel in 1937 as “SPicy meat and hAM” and the use of spam for unwanted junk mail is from a 1970 Monty Python sketch partially quoted here:

SPAM is best eaten warm and fried, but it is also good in a sandwich or a soup. SPAM is a potted meat sort of like a sausage encased in metal instead of intestine. People have strong feelings about SPAM but I think of like sausage. Another thing that should be fried and warm when eaten. And like sausage, you do not want to think too much about what is in it or how it is made.

In the way of urban legends, there is also that idea that SPAM tastes like human and that is why it was so popular in the former Sandwich islands (Hawaii) where the original inhabitants did eventually boil up Captain Cook… such an unfortunate name…

Barbecue, the All American Way

Discussing barbecue or bbq can lead to arguments. There are strong opinions of what is true barbecue. Experts will tell you tales of smoke, heat, wood, water, fire, dry or wet, brine or no brine, cut, butt, baby back ribs, spare ribs, pork shoulder, brisket, beef ribs, East coast, Carolina, Florida… the terminology goes on and on. Plus now in the DC area, there is Korean and Salvadoran barbecue and all the fusions in between.

Barbecue is quintessentially American. The word comes from the native word barbacoa from the island of Hispaniola (today’s Haiti and Dominican Republic). The idea is that long slow applications of heat will improve tough cuts of meat. Everyone used to use all the parts of the animal and turn them into sausages etc. but here are the most famous types (for a good read, try this article) explained simply:

Carolina style is pork usually slow smoked for 12-20 hours, served pulled apart, tossed in a vinegar dressing, and served in a bun.

Memphis style is pork ribs (and shoulder) in a dry rub. The shoulder is pulled and served in a bun.

Top platter has chicken, Texan brisket, Memphis style pork, Carolina style pulled pork, sausage, and turkey.

Texas is all about beef. Brisket is the most famous type but there are also tri-tips. The best barbecue in the DC area is 2fifty.

Brisket can be as juicy as this but it is hard to find. This was at Rose’s Luxury years ago.

Kansas City was once the meat packing center of the US. The barbecue here is ribs with sauce.

Kansas style ribs on the upper left smothered in sauce, pulled pork, sauce, coleslaw, brisket, sausage, and wings. Fries in this style are a new fusion-y thing.

Apart from the meat, the sides are a big part of barbecue. I once had the best garlic coleslaw at a barbecue joint in Texas. I tried to buy the sauce but they said that it was only for eating in the restaurant. Darn.

Every year there are barbecue competitions and secrets about sauce, rub mix, and every other element are guarded in bank vaults.

The Oldest Farmers Market in America

Supposedly George Washington sent produce from Mount Vernon to be sold at the Alexandria Farmers Market (I presume the “Old” came in later). The Old Town Alexandria Farmers Market has been on the same spot since 1753. Yes, you read that right. There is very little in the USA that has that sort of age (insert pun here).

A friend told me about this market and I had “been” many times when talking with her while she was walking there. But I finally went.

At first I was a bit so so about it because it seemed more like just a bunch of tents set up. But then I became alright with that. Not every market can be alleyways in a souk. This market was sunny and cool on this crisp fall day.

Lots of people selling all kinds of things from fresh milk, apples, pies, pastries, artwork, coffee, chocolate, dumplings, cider, vegetables, hummus, and veg-forward food (vegetarian).

I had read about the breakfast sausage sandwich from Hog Heaven. I stood in line for 30 minutes for my breakfast sandwich. It was good but not something I would stand in line for again. I guess I wish that all breakfast sandwiches were so good that a sandwich like that was the norm.

Samples are a great way to make sure you like it.

On the other hand, Coulter Farms is my new crush. Their fresh milk is so creamy and delicious that I drank a gallon (3.75 liters) in two days. They also sell cheese, yogurt, kefir, chocolate milk, chilli, meat, and granola. But, it’s about the milk. I ask them if they made cream and clotted cream and was told, “Only when there is leftover milk.” Well, I can see why there isn’t. I would drink it all.

I reached out to Coulter Farms to see if we could visit their farm in Pennsylvania. Eeeek! I got a friendly email from Ma Coulter saying that they will be opening a B&B soon. So excited!

Anyway, the Old Town Alexandria Farmers market is open every Saturday, rain, shine, hot, warm, freezing, from 7-12 noon. Yes, even in the winter. Get there early.

Chur – Oldest Town in Switzerland

At the end of the Bernina Express, we got out at Chur, Switzerland. Supposedly the oldest town in Switzerland. We mostly enjoyed the ‘old town’ which was only 300-600 years old.

We were there on a rainy spring day which suited us fine. Normally this town is crowded during ski season. We had it pretty much to ourselves.

I didn’t get Swiss fondue but I was tickled pink by the sausage dispenser on the side of the street. Sometimes the necessities need to be easily had, at any time of the day.

The German Butcher – Santo Domingo

Sure, go for the ribs and potatoes too. Plus the German beer. But, mainly, it’s a good place to drink and carouse. Carolina, the Jamaican German who owns this place makes this one of those places where you feel welcome. There are various men and boys, like the baker’s son, who will deliver your food to you, but you order stuff inside. This is a place where the water is the most expensive item on the menu. A lunch plate for two of ribs and potatoes (split open like hot cross buns and soaked in chives and butter), with meatball thrown in, cost around 545 pesos ($10). The addictive potatoes are the accompaniment, and when she remembers, there is sauerkraut. The only sauce is a sweet mustard, unless she remembers to make a chili sauce. When I asked for chili sauce, she brought me the tiniest chili peppers (they were under an inch in size) to chew on. This place is easy to find on Google. Once you find the street, the restaurant is a few hundred yards up the street, next to another stall. The German place is quite large with a small beer garden feel. There are lots of fans and shade to keep you cool if the icy cold beer doesn’t. Inside, you order your food at the deli counter and the beers at the other corner. They will keep track on a chit and you pay when you leave. Not sure about credit cards as I paid cash. Inside, the German Baker had a table set up selling his breads. Grocery Stores in Gulshan

As an expat, grocery shopping can be an adventure. But if you don’t want one, here’s a list of stores which come closest to what you would find in the U.S., Australia, or England. Many of these places are on my map of 99 expat places.

Unimart, Road 91, near Gulshan 2 circle: Opened July 2013. Wide clean aisles… The store is like a small Target or Walmart. It is in the basement with parking garages below. Excellent service. Everything from coat hangers, plastic flower pots, sports jerseys, kitchen appliances, clothes, fresh fruit, British pickles (no food dye), children’s shoes, men’s shoes, sports gear, bakery, etc. etc. Very clean and with wide aisles.

Dali, in the corner of DIT 2 (the horsehoe market across from the Westin): A good selection of fresh meat, vegetables, and the usual canned goods. Houses the Australian Butcher who will butcher to order.

Agora, in the Agora building on Gulshan Avenue, same building as Bamboo Shoot: This has pretty much everything. A little pricey.

Lavender, on the road behind the Landmark building which is the northwest quarter of Gulshan 2 circle: It has a fair selection for hefty prices. The second floor is great for nail polish, toys, etc.

Korean Mart, road 12 in Banani: They have everything from fresh tofu, vegetables, buckwheat, and almost everything you didn’t know that you wanted. It’s pricey.

Meena, Road 11, Banani (It’s a local chain so you will find them all over.): Has almost everything but not so much of it.

Then there are some small shops that one could shop at which do not sell pots and pans:

White Hen, near Rok restaurant in Banani: This is mostly a deli and bakery run by the same guy who is the “Australian butcher” at Dali.

“Organic grocer” — is Southwest Gardens. They have vegetables, frozen fish, rice, honey.

German Butcher, on road 59 (I think): deli meats, cheese, bagels, fresh brown bread, and they will butcher pork to order.
